CHILI OIL

~~ INGREDIENTS ~~

  • 1 cup coarse chili powder
  • 1 cup medium chili powder
  • 1 cup fine chili powder
  • 1 tablespoon salt
  • 1 quart canola oil
  • 1 stick cinnamon
  • 4 bay leaves
  • 1 cup green szechuan peppercorns
  • 1 cup red szechuan peppercorns
  • 2 stars star anise
  • 1 tablespoon fennel seeds
  • 1 white onion
  • 1 bunch cilantro
  • 1 bunch green onions
  • 1 head of garlic
  • 1 knob of ginger
  • 1 tablespoon sesame seeds

~~ INSTRUCTIONS ~~

    To a large, heatproof bowl add all three types of chili powder, salt, and a tablespoon canola oil

    To a separate bowl add the cinnamon, bay leaves, szechuan peppercorns, star anise, and fennel seeds with a splash of water

    To a large pot, add the onion, cilantro, green onions, garlic, and ginger

    Pour the rest of the canola oil over the vegetables

  5. 5

    Add the wet spices to the pot as well

  6. 6

    Heat the oil to 300°F

  7. 7

    Remove the vegetables and spices from the oil

  8. 8

    Pour about half the oil over the chili powders

  9. 9

    Heat the rest of the oil to 350°F

  10. 10

    Pour the rest of the oil over the chili powders

    While the oil is still hot, add the sesame seeds
